Vanilla Protein Waffle

Four weeks, 11.6 lbs. down and still going strong!

Four weeks ago, I made the decision to focus on my health. Since then, I have made some changes in the way I eat and the pounds are coming off. I am already feeling better, my clothes are fitting more loosely than before, I have more energy and I am looking forward to continuing on this journey.

The most helpful thing has been to focus on my protein intake every day. I have set daily protein, carb and fat goals and I have been sticking with them. I have felt full and satisfied which has made this journey surprisingly enjoyable.

It also helps that I fill my days with lots of foods that I love. Most mornings, I start with a natural energizing tea that supports my weight loss and then follow that with a protein shake. Because I also like to eat and have a sweet tooth, I have a waffle almost every day. They remind me of the waffles my Mom fixed for me when I was little. 

Recently, I started making my waffles with protein powder so they are not only yummy but also very filling. Not all protein powders will work though. I have tried this simple three ingredient recipe with whey protein and that didn’t work well at all. I believe the Life Shake works so well because it has an ancient grains blend in it that thickens the mixture to a nice and smooth batter. The recipe works out perfectly for one waffle but I find that I often end up making one for everyone else as well. They love them, too!!! 

I love having my waffle topped with fresh sliced strawberries or no sugar added apple butter (I love Kime’s) but I am always looking for new ideas of what to top them with.

Vanilla Protein Waffle 4

Vanilla Protein Waffle (gluten free, dairy free)

2 scoops Vanilla Life Shake

1 egg

1/4 cup water

Optional: 1 tsp vanilla extract

1 tsp olive oil

Instructions:

Add Life Shake, egg, water and vanilla extract (optional) to metal bowl and whisk until all clumps are gone and batter is nice and smooth. Heat waffle iron and brush with one teaspoon olive oil. Add batter and even out before closing waffle iron. Open up when light indicates that it’s done. Carefully separate and decorate with fresh fruit or apple butter. Enjoy!
